    Dough recipe:

    * 600g KA 00 flour
    * 420g water
    * 3g active dry yeast
    * 18g salt

    I let the dough rise at room temp for about 6 hours with two stretch and folds in there, then let it sit in the fridge for another couple hours. Then I form ~200g dough balls and let them sit at room temp for about an hour before starting to cook.
