I dislike the taste of protien powder in pancakes so this alternative is delicious. 1/2 cup low fat cottage cheese, 2 eggs, 1/2 cup oats (old fashioned or instant), 1/2 tsp baking powder, a small pinch of salt, a splash of vanilla extract and dash of cinnamon.
Blend all ingredients in a blender and then fry in non-stick pan like regular pancakes! This makes around six 4 inch diameter pancakes in total (They are a bit flatter than regular pancakes but I was shocked by how good they taste!
I usually top them with a bit of lite syrup or berries and sugar free Cool Whip. Enjoy!

One of my favorite recipes too! They’re so good. I actually use 1 egg and 60 grams of egg whites in mine to lower the calories just a little bit more. Delicious!
Could you use greek yogurt instead?
I do something very similar but with chobani zero sugar vanilla Greek instead of cottage cheese and vanilla extract but will try this
