Recipe is for 2 loaves:
200g starter 900g AP flour 620g water 16g salt
Mix all together, Rest 30 mins Stretch and fold 1 – Rest 2 hours Stretch and fold 2 – Rest 2 hours Stretch and fold 3 – Rest 1 hour Preshape – Rest 1 hour Final shape into banneton (well one banneton one cloth lined bowl) in fridge until morning.
In the morning: Preheat oven to 450F, with dutch oven inside. Bake with the lid on for 30 mins, reduce temp to 410F, remove the lid, bake an additional 20 mins.
I’d love some feedback if anyone has any, although I have been pretty happy with these loaves so far!
