good morning and welcome to cow chef
kitchen I’m Chef Matthew it’s Sunday
morning which means Robin and I have
already gone to do our grocery shopping
for the
week this week I will be doing six
dinners lots of lots of fun
stuff so last night Robin treated me to
dinner out
we went to our local Italian eery
marcelos we both ordered the same thing
without even talking to each other it’s
the whole being married 23 years minds
think
alike she ordered hers with alfredo and
marinara a 5050 and I just ordered mine
with just
alfredo we had wonderful service by
Young by a young woman named Mia
she was great very nice just overall
great service the food was excellent as
always so yeah
today in this evening I’m preparing
tuskin white bean soup it’s Sunday we’re
still in the winter it must be soup
night so there’s a lot of stuff in this
I didn’t really realize it until I just
started doing my mus and
pl there’s a lot let me show
you all right we got the Dutch oven
out and we’re going to start to kind of
start in the Middle with the beans the
the calini beans they’re a white
mean and then there’s some Italian pork
sausage and I’m using the hot spicy
version of course I got some chicken
stock some white wine some heavy
whipping
cream um a a rusted
potato which will be cubes some garlic
butter a shallot and we’ll be zesting
most of this lemon and some celery of
course some virgin extra virgin olive
oil Kure salt black
pepper and there will be a bay leaf
couple handfuls of baby
spinach and sundried tomatoes which are
in oil and parmesan cheese and for the
urban
spices there will be the Italian herb
blend whole time and red pepper
flakes a whole lot going on but it’s
actually a simple suit not not a lot of
prep really
so I read an article a little while a
little while ago and this came from you
know a reputable but the question is
what do bay leaf really do in things
like soup and
sauces the answer was nobody
knows
so ponder
that stay out of the mountains here in
Northern
