Registered Dietitian Kirby Moir shows us how to make the salad and potatoes that are part of the weekend meal deal at Food City.
Mediterranean Salad
For the dressing
• 1/3 cup grated Parmigiano Reggiano
• 1/4 cup fresh lemon juice
• 1 small garlic clove
• 1/2 tbsp Dijon mustard
• 1 teaspoon Worcestershire sauce
• 1 tbsp extra virgin olive oil
• 5 tbsp fat free Greek yogurt
For the Salad
• Fresh ‘n Crisp salad greens
• 1½pounds Yukon Gold potatoes, cut into 1-inch pieces.
• 3 tablespoons olive oil
• Kosher salt and freshly ground black pepper
• 2 tablespoons fresh lemon juice, plus more if needed
• 1 cup cherry or grape tomatoes, halved
• ½ cup roughly chopped pitted Kalamata olives
• ½ cup chopped fresh dill
• ½ cup chopped fresh parsley
• ½ cup sliced pepperoncini

Instructions
1. In a large salad bowl add the cheese, the lemon juice, garlic clove, mustard, and the Worcestershire, stir to combine. Add the oil and yogurt and mix well
2. Heat oven to 400 degrees. On a large rimmed baking sheet, toss the potatoes, 2 tablespoons olive oil and a pinch each of salt and pepper. Arrange in an even layer and cook until golden-brown and crisp, tossing about halfway through, about 35 minutes.
3. Let the potatoes cool for 5 minutes, then add them to a large bowl with the lemon juice. Toss to coat, then let cool to room temperature.
4. Add the tomatoes, olives, dill, parsley, pepperoncini and remaining 1 tablespoon olive oil to the bowl. Stir gently to combine. Serve room temperature or cold. Add to prepared dressed salad

great ideas for the weekend taking
advantage of that weekend meal deal

incredible too we get so many fresh
components which I love we went through
the chicken earlier we went or the
roasted vegetable um this is featuring
the salad which I love fresh and crisp
it has a really nice crunch to it um but
I’m going to mix up a Mediterranean
salad this morning so it’s kind of like
a take on a Caesar um and you know no
surprise I’m featuring Greek yogurt here
as the base of our dressing as you
should as we should yeah and of course
we have a couple tablespoons about five
tablespoons of Greek yogurt you could do
half Greek yogurt half Mayo if you want
to lean that way but we’re getting more
protein
some probiotics and then no fat since
we’re doing that nonfat feel like you
cannot taste the difference if you don’t
know no it’s going to be creamy and
delicious same as we did with the
chicken we’re going to feature some
heart healthy olive oil in there and
similar to the chicken as well we’re
going to add some acid from another
squeezed lemon I think that’s our theme
today that fresh component um I joke I
can’t say wor shisher I call it I call
it woozy woozy sauce um you know you’re
going to mix that together and I you can
use use anchovies if you wanted to or
anchovie paste or a little bit of fish
sauce it’s going to give you a little
bit of just that kind of Caesar dressing
we see it starting to come together here
and then you’re going to hit it with a
little bit of
cheese little bit of Parmesan cheese
which is nice kind of adding in there
you really are going with a little bit
of a Caesar flare aren’t you yeah and
then I think I call it a Mediterranean
because of what we’re going to do with
toppings you can add a little bit of
salt and pepper in and then the trick
here is that you’re actually going to
add your Greens in before you do your
toppings and I’m going to go ahead and
toss all of that in my dressing okay so
that’s going to kind of be you just want
to do the twist and turn method it’s
going to get everything nice and coated
in that dressing and for the time sake
of people watching at home I might just
go ahead and feature my toppings in
there but you’ll notice it’s going to
look like that creamy Rich Caesar
dressing we all love but we’re getting
that healthier component by switching in
for that Greek yogurt um and then the
toppings that I like to do I’m going to
do some fresh dill and fresh parsley
okay you’re not going to notice this but
it is really going to Zing up the flavor
and then a little bit of olives and
pepper Chis in there and then we’re also
going to add in some sliced tomatoes
look at the color yeah and then of
course you could do a little bit of
cucumber if you wanted you could do some
sliced bell pepper but this is a nice
option you could top it with your
chicken I actually love to almost
replace a crouton with roasted potatoes
oh nice yeah if you get it crunchy
enough H yes and so again I did my
potatoes which are going to come with
that meal deal so everything that we’ve
mentioned today isn’t that a great deal
I’m like hyping it up my family will be
eating this this weekend I think we will
too but you could do this as a side or
features this as the topping and the
benefit of what we’re seeing here we’ve
hit our protein we have our antioxidants
and our nutrients from this we’re
getting some Fiber from our potatoes and
our roasted vegetables so I said at the
top of the show this is like dietitian
pick all around you’re not going to be
missing out on flavor and again we’re
getting those of nutrients in and I like
that you did the little twist and turn
here what’s the benefit of tossing it
with your before you do the Toppings is
it just so I like it because you end up
getting a better flavor on all of your
salad greens um of course if you wanted
to kind of from a yeah it looks
beautiful and again everyone’s like oh
that’s really rich and creamy and like
but it’s a decadent dressing and we saw
how quick that was for me to put
together this morning just a few
ingredients you probably have at home
you’re well on your way to making a
little bit of a heart healthy and again
that’s why we’re calling it a
Mediterranean salad because it’s filled
with those heart supporting nutrients
and if you didn’t know it you would not
be able to tell that that’s that Greek
plain yogurt I feel like if you open
that and you take a bite you’re
definitely going to taste that but if
you use it in your cooking it’s an
ingredient component yes yeah and of
course you can always buy a single
serving cup if you’re intimidated like I
don’t know if I’m going to use the whole
thing test it out with one of those it’s
a great way to acclimate don’t tell your
family either you don’t need to tell
them your secrets know every right and
then of course you can see how that
works out but um again we’ve added a lot
of flavor some fat and then we’re still
hitting it with some cheese and some
more decadent things to kind of balance
out and that meal deal starts today runs
