In today’s video, we’re going to be making roasted habanero mango salsa
This is a great way to elevate
From a traditional salsa
We’re going to start off and cut our onion in half
You want to remove the outer layer, the skin, and the dead skin from your onion
And remove the stem from the top and bottom
Go ahead and place this onto your roasting pan
Next we’re going to stem our tomatoes
Using a small knife
Cut into the stem
Just make a circle
Remove the stem and discard
And then cut your tomato in half
And once all your tomatoes are done, place them face down on your roasting pan
You want to grab a little bit of olive oil
Take your brush
Just lightly brush a little bit of oil over the skins
Not a whole lot. You don’t have to coat the whole thing
Oil is just going to help get you a nice char on the outside of this when you roast it in the oven
After that you want to do the same thing with your habanero pepper
Cut it in half. Seed it. Place it on your pan
And then we’re going to place all of this into the oven
to roast at 425º for maybe 10 or 15 minutes. Just until you get a nice char on the outside of your vegetables
While those vegetables are roasting, we’re going to get our other vegetables for our salsa ready
We’re going to take our mango, and we’re going to cut it in half
When you cut it in half, you need to stick a small knife in there, and feel around for the pit
Kind of poke your knife in there until you find the pit, and then start to cut it around the outside
Try and go in as far as you can. If you bump into the pit, just pull your knife back out
Reorient it and start again
Pretty soon you should be able to cut all the way through the mango
Once your mango is halved, take a large spoon
And you can scrape the center of the mango out
Being sure to leave the skin behind
As much as possible. You don’t want to put that into your salsa
And once you have
All of that removed
You’re going to take that and you’re going to add it to your blender
You’re going to take a few sprigs of cilantro
Remove the stems. Add those (leaves) to the blender

Our vegetables are all done roasting now
And we’ve already added the mango and the cilantro to our blender
Next we’re going to take our tomatoes
Be careful, these are hot. You want to pull the skins away from the tomatoes
And remove the skin
And then throw them into the blender
Once all of your ingredients are added to the blender, turn the blender on low
Thoroughly combine all the ingredients. If you need to: remove the lid, take a spoon
Stir the ingredients down a little bit
And restart your blender
Once all the ingredients are thoroughly mixed
You can serve it immediately, or you can refrigerate it to use later
Today we’re going to be serving this over tilapia with some white rice
Spoon it gently over the top
And you’re all set to go
