If you haven’t tried this delicious greek chicken soup, its a must try! It is so creamy and hearty! You will be obsessed!

Ingredients:
500g Chicken thighs
1 Onion, whole
10 L Water
3 Bay leaves
1 tsp salt
1 tsp Olive oil
½ cup Arborio Rice ( any Short grain rice)
Egg Lemon Sauce:
3 Eggs
2 Lemons, juice
1 Tbsp. Olive oil
1 tsp Salt
1 tsp Black Pepper
Hot water

1) Remove lemons and eggs from fridge to bring to room temperature
when needed.
2) Place chicken in a pot. Add whole onion and water.
3) Add bay leaves, 1 tsp salt and 1 tsp Olive oil.
4) Bring to a boil and skim the top.
5) Lower heat to Medium-Low and let boil for 45 Minutes.
6) Remove all contents in broth. Bring to boil.
7) Add rice, lower heat to medium-low, and cook rice until done. Turn off
the heat.
8) Add eggs into a bowl and beat.
9) Add lemon juice and beat.
10)Take a ladle of the hot broth and empty it into the egg mixture as you
mix it vigorously so the egg doesn’t form. Continue this for about 4
spoons.
11) Add the lemon egg mixture back into the pot with the broth.
12) Mix, add 1 Tbsp. Olive oil, 1 tsp salt, 1 tsp black pepper and bring to a boil.
13) Turn off heat.
14) Shred the chicken, add as much as you like in the pot, and Mix
15) Add hot water to the soup to make it more or less thick ( to your liking).
16) Add Salt and Pepper to Taste.
17) Serve and Enjoy!!!
