The authentic #fettuccinealfredo Fettuccine Alfredo Alfredo doesn’t have cream, only 4 ingredients: Butter, pecorino romano cheese, pasta water and the fettuccine! Topped off with a perfectly pan fried #chicken cutlet!

Pasta dough (makes just under 1 pound):
75 grams semolina flour and 75 grams of ’00’ flour
3 large eggs
teaspoon of salt
1 tablespoon olive oil

#chicken Cutlet:
slice chicken breast think
pound to desired thickness (thinner the better)
season eggs, flour and chicken with salt and pepper
dredge cutler in flour, egg then breadcrumbs.
fry in olive oil or extra virgin oil until golden brown
When finished cooking, let cutlets sit on paper towel to absorb the oil!

#Alfredo Sauce:
Add butter to a pan and put on low heat. Add cooked pasta to pan with pecorino romano cheese, add a scoop of pasta water, salt, pepper and mix until creamy cheese sauce forms. To thicken sauce, add more cheese. To think sauce, add more pasta water.
