Sir Charles cooked 30 hours at 135, cooled 45 minutes, and finished in avocado oil and butter. Can cut it with a fork.

    Just my take but based on the fibers of the meat it looks like the chuck roast would’ve benefitted at a slightly higher temp. Looks a bit raw

    you sure your sousvide has accurate temp? This looks almost undercooked for 135.
