Recipe: make vegan risotto, ball it, bread it, fry it, serve with sauce. I also squeezed fresh lemon juice on them right before serving.
Risotto recipe: make a really flavorful veggie/mushroom broth. Add arborio rice and aromatics to pan and sauté a couple minutes. Add broth. Stir constantly until it’s risotto. Add a little vegan Parmesan if you want but I didn’t.
These freeze up perfectly (before frying) for some quick snacks. Have fun
