a meatball that literally tastes like
thanksgiving dinner so first we have to
make
the cornbread stuffing part of this i
took half a bag of stuffing i warmed up
some stock and doused the bread and now
it’s nice and moist now we’re going to
put some celery and onion into a pan
with a little butter or olive oil or a
combo and we’re going to get that to
sweat
by adding salt
so i’ve got some fresh sage fresh
parsley throw it in there we’re going to
put a little poultry seasoning blend
over our ground turkey
you can buy the all white meat turkey
that’s 99 lean we prefer the mix of the
light and dark meat mixed together
regardless i add a little olive oil so
this browns evenly in the oven and we’re
going to add
the golden raisins that we plumped in a
little hot water
honey you go flippy the pan while i do
this stuff okay
john loves the pan flip
wait let me add the garlic first please
no i get excited well just don’t flip it
in my face
i understand sweetheart have fun
he i know look at me he’s good
to her make sure we’re gonna add an egg
now when this is a
one or two more minutes soft you’re
going to add this to this bowl so it can
cool
okay to the turkey we’re going to add
like a scant half palm full of fennel
seed i already have salt and pepper in
there so you see how this is all going
to come together we have potatoes
like shapes like sizes start with cold
water cover it by a couple inches bring
it up to a full boil then salt now we’re
going to add
two
faux bulbs of garlic once we roast
garlic it becomes really sweet and
delicious we have six potatoes here
you’re gonna use two bulbs of of that
sweet garlic all you do is cut the end
off the bulb of garlic to expose all the
cloves put a little drizzle of oil on it
make a foil pouch and roast it until
it’s really smooth and sweet and tender
a little bit of nutmeg i’m gonna grate
down in there
and i’m gonna
roll the potatoes and the garlic through
the ricer
butter and warm milk
put it right in there buddy
thank you my friend
add a little pinch of white pepper and
nutmeg salt to taste so i have a foil
and parchment line tray here
which john is going to
thankfully put in the oven
so are we going to get these guys into
the oven
and we’re going to talk about uh again
remind you how we’re going to serve them
we have the roasted garlic in that pot
mashed potatoes that are staying warm in
the ben mackie
you can serve it with cranberry sauce or
applesauce we have an apple sauce here
that’s sweet and savory just cooking
just in more apples really and it’s in
its own dresses it’s apples with apples
it’s cider
and uh some fresh thyme
and diced apples of any variety and you
cook them down into like a chunky sauce
or of course you can just make cracked
cranberry sauce you make a beautiful bed
of your roasted garlic
mashed potatoes
then you nest the meatballs
right down in that
then
we’re going to finish the gravy with a
little touch
of lemon juice just to brighten it up
and this is just roux flour and butter
equal amounts whisk it together when it
bubbles salt pepper turkey stock or
chicken stock or bone broth let it
thicken up a little bit actually like a
light kind of a light gravy on this
and add
all of your same herbs your usual
suspects for this time of year or
thanksgiving
i have sage thyme and parsley
i like to save a little to pass at the
table
but i like to pour it
down over the top as well
and just put that
chunky apple sauce with fresh thyme
you could also do this for cocktail
parties you make little teeny tiny bite
size meatballs put it in a dollop of the
roast mashed potato
put the gravy on the side and a dot of
cranberry sauce on top and then they
just dunk and take it away at the party
wow so cute
