Chickpeas (Ceci) with Vegetables

Ingredients

500g dried chickpeas
1 cup celery, diced
2 carrots, diced
2 potatoes, cubed
1 medium onion, diced
2 cloves garlic, chopped
4 cups of Silverbeet/Swiss Chard/Spinach, chopped 2cm wide (leaves and stems)
1/4 cup olive oil
Salt and pepper, to season to your liking

Directions

1. Soak chickpeas in lukewarm water overnight.
2. Place chickpeas in a large pot of cold water and bring to boil. Simmer for 15 minutes.
3. Add all other vegetables and the olive oil.
4. Salt and pepper to your liking.
5. Bring to the boil, reduce heat and simmer for 30 minutes.

Serve with extra pepper and a drizzle of olive oil with toasted bread, rice, or small cooked pasta (ie. tubetini).
