To Make Roasted Eggs

Egg – 10 Nos
Oil – 1 Tsp
Turmeric Powder – 1/2 Tsp
Red Chilli Powder – 1 Tsp
Black Pepper Powder – 1 Tsp
Salt – 1 Tsp

To Make Egg Curry

Oil – 3 Tbsp
Mustard Seeds – 1/2 Tsp
Cumin Seeds – 1 Tsp
Onion – 3 Nos
Green Chilli – 4 Nos
Ginger Garlic Paste – 2 Tsp
Tomato Puree ( 3 Tomatoes )
Red Chilli Powder – 1 Tsp
Coriander Powder – 1 1/2 Tsp
Salt – 1 Tsp
Pepper Powder – 2 Tsp

Coriander Leaves

METHOD:

1. Boil the eggs, remove the shells, cut them into halves and keep them aside.
2. Take a wide, flat pan and add oil. Add turmeric powder, red chilli powder, black pepper powder and salt.
3. Mix well and saute the powder for 10 seconds. Then place the egg halves and roast them for 2-3 minutes each side on a low flame.
4. Remove the roasted eggs from the pan and keep aside.
5. Take oil in a wide kadai and heat it. Add mustard seeds and cumin seeds. Saute.
6. Once the mustard seeds start splattering, add onions and saute until they are golden brown in color.
7. Add green chillies, ginger garlic paste and saute until the raw smell is fully gone.
8. Add the tomato puree and mix. Saute until the moisture is fully gone and the gravy is thickened.
9. Add red chilli powder, coriander powder, black pepper powder and salt. Mix well.
10. Add water, mix well and cook the gravy for 5 minutes.
11. Gently drop the roasted eggs in theh gravy and cook them in the gravy for 5 minutes.
12. Lastly add fresh curry leaves and coriander leaves. Turn off the stove.
13. Yummy, tangy and spicy egg curry is ready to be served hot and nice with rice/roti.

hello everyone welcome to Home Cooking
With Me Hima suban eggs are rich in
protein and so many people try different
recipes to see how they can include eggs
in their diet easily so today I’m going
to show you all a really nice egg curry
recipe this is a Tamil Nadu special and
it’s famously known as muta cor meaning
egg gravy Curry so let’s get started and
check out this absolutely simple your
delicious egg Curry for the egg Curry I
have already boiled about 10 eggs and
removed the shells now I’m just going to
cut them all into halves and keep them
aside take a white pan add about 2 tasps
of oil keep the flame on low and add
half teaspoon of turmeric powder 1 taspo
of red chili powder 1 TP of black pepper
powder and 1 tpoon of salt just mix all
the powders on low flame to make sure
they don’t get
burnt now gently place all the egg
halves in the pan spread the eggs all
across the pan to let them absorb the
masalas after 2 to 3 minutes flip them
to the other side and roast them for
about 2 to 3 minutes
again once done keep the roasted eggs
aside now take a white Cai and add 3
tbsps of oil and heat it once the oil is
hot enough add half teaspoon of mustard
seed 1 TPO cumin seeds and let the
mustard seeds splatter then add three
finely chopped large onions and sauté
until they golden brown in
color you can see here the onions are
slightly browned at this point add four
slit up green chilies you can adjust the
chili quantity according to your taste
once the onions are nicely roasted add 2
teaspoons of ginger garlic paste keep
the flame on low and and
sauté after the raw smell is all gone
from the ginger garlic paste add the
puree of three large Tomatoes mix well
and sauté until the raw smell from the
tomatoes is also
gone if you see here the tomato gravy
has thickened nicely and the oil is
separated at this point add 1 teaspoon
of red chili powder 1 and 1/2 tpoon of
coriander powder 1 tpoon of salt 2 taspo
of pepper powder and mix well there’s a
really nice aroma coming from these
spice
powders now add 1 and 1/2 cups of water
to the
Karai gently mix and let this gravy base
cook for at least 5
minutes after 5 minutes you will be able
to see the bubbles in here at this stage
you can gently transfer the roasted eggs
to the
kai keep the flame on medium low and
cook the eggs for about 5 minutes now
this will make sure that the eggs absorb
all the flavors in the
Masala lastly I’m adding some fresh
Curry leaves for a nice flavor and
Aroma also I’m adding some finely
chopped coriander leaves for
garnish that’s it our egg Curry is ready
to be served nice and hot with some nice
hot rice or
