Had a tuna head and couldn’t find much info on using it as sashimi/sushi

Anyone ever used it before?

Most recipes were for broth or smoke

    So I can’t speak to the conditions required, but you absolutely can enjoy cuts from the head as sashimi, sushi, or over rice in a don. A couple cuts to consider using are “hoho niku” which is a delicacy from under the eye, and “noten” which comes from the top of the head.
