I tested marinating tomatoes because I was craving this flavor. My friend and I tried it, and they said it tasted like restaurant-quality bruschetta! A huge compliment for me since I love to cook. When I tasted it, it was better than I expected! Wanted to share my recipe. The pictures visualize some of the steps, and the last picture is my toast with Treeline Cashew Spread and my Simple Marinated Tomatoes.

Simple Marinated Tomatoes

The measurements are whatever you can fill in your jar. I used a ~24oz jar that is sealable.

A variety of Cherry and/or Grape Tomatoes sliced in half (or could work with any tomato)

A bunch of fresh Basil, chopped or sliced (I eyeballed this, but used at least 1oz)

Pinch of Salt (optional)

Fill the jar with the tomatoes and basil, then add:
Balsamic Vinegar
Red Wine Vinegar
(I used a little more RWV than Balsamic, between 2:1 and 1:1. You just want to fill the jar so it covers the tomatoes).

Wait 12-24 hours before consuming.

The measurements here really don’t matter much, it’s simple because you just fill your jar.
