Delicious healthy and vegan lentil soup made the Greek way with simple ingredients. Easy and quick to make. It’s a must-try!

Ingredients:
1 Onion
2/3 cup Olive oil
2 Garlic Cloves, Pressed
500 g Lentils, rinse with water
2.0 L Water
1 Vegetable Bouillon Cube
1 tsp Salt
1 tsp Black Pepper
1 tsp Cumin
Pinch of Oregano
2 Bay Leaves
1 Tbsp. tomato Paste
Salt and Pepper to taste
Red Wine Vinegar (Optional)

1) Heat 1/3 cup of Olive oil.
2) Add chopped onion and sauté for approx. 5 mins.
3) Add rinsed lentils and sauté for 30 seconds.
4) Add 1 Tbsp. tomato paste and sauté for 30 seconds.
5) Add Salt, Pepper, Pinch Oregano, Cumin, Garlic and Mix.
6) Add 2 Bay leaves, 1,5 L of the Hot Water and Stir.
7) Boil on Medium Low for 30 Minutes.
8) Add 1 vegetable bouillon cube.
9) Add 500 mL of Additional Hot Water and 1/3 Olive Oil and let boil for 15 more minutes.
11) Serve and Enjoy!
12) For added flavour, add some Red wine vinegar to your bowl of soup.
