Made dinner for my bf and I this past weekend! Roasted black bass, eggplant boats, marinated tomatoes and lemon orzo for him. First post, how did I do?

    fish:
    1 to 1.5 lb whole fish, something like branzino, trout etc (I used gutted but would be better if it were deboned and butterflied
    1 tbsp EVOO
    Fresh thyme
    Fresh lemon
    Garlic
    S+P

    Preheat oven to 450, rack in top third. Make diagonal slits in skin of fish. S+P on inside. Stuff with slices of lemon, fresh thyme, and sliced garlic. Rub olive oil, Salt and pepper on top. I added dried greek oregano too because.. well… I add it to a lot of stuff haha. Bake for 20ish mins or until skin is crispy and flesh is tender

    Tomatoes:
    1 cup sweet cherry tomatoes, sliced in half
    1tbsp olive oil
    As much jalapeño or other chili as you like, minced
    Salt, pepper, oregano
    1tbsp white wine vinegar
    Sliced garlic

    Combine all in a bowl and let sit

    Orzo: 1 cup dry orzo, 2.5 cup chicken broth, a few thick strips of lemon zest, fresh parsley, half tbsp of butter, lemon juice. Boil orzo with broth and zest for 10-15 mins or until al dente. Add in butter and let sit for a couple of minutes. Add juice of a half a lemon and parsley and serve
