Used Serious Eats recipe: 155 F for 36 hours then broiled for 15 in air fryer.
Turned out incredible, couldn’t recommend more. I had 6 other legs in the bath, two of which I vacuum sealed and froze together and the remaining four I shredded, portioned and froze.
I also used a Serious Eats recipe for the potatoes which will now be my go to roasted potato recipe.
The potential of duck legs are maximized by the sous vide, give it a go!
