Yukon golds stay a little firmer. * In the final step, I also add minced shallots and red wine vinegar to the pan sauce. I also add some more stock or water and let the shallots cook in that for several minutes. This helps cut the salty and fatty pan sauce and make it a little more robust. * Don’t discard that delicious roasted garlic like they crazily suggest! Either smash it into the sauce or eat it yourself.
