    But over time I’ve tweaked it a bit:

    * I use russet potatoes instead of Yukon gold potatoes. I like that the russets turn creamy and fall apart when you eat them. Yukon golds stay a little firmer.
    * In the final step, I also add minced shallots and red wine vinegar to the pan sauce. I also add some more stock or water and let the shallots cook in that for several minutes. This helps cut the salty and fatty pan sauce and make it a little more robust.
    * Don’t discard that delicious roasted garlic like they crazily suggest! Either smash it into the sauce or eat it yourself.

  2. If you’re eating just potatoes for a meal, make sure to eat the skins too. Lots of nutrients
