    Depending on the cut and quality if it’s really high end you can get away with it and some people prefer it. I’m guessing that is a New York and they’re tricky because they get overdone real quick. Outside looks perfect

    Joking aside, definitely “black and blue”, or barely rare… (coming from a colorist, with highly color accurate reference monitor).

    On the rarer side, but love the color/sear on the outside. Looks tasty, I’m all about the flavor, temps matter too tho just a personal preference.

    The middle is rare, you can tell by the color; probably cool/cold to touch. I would eat it
