hey guys so I am making a small batch of
potato salad with a little bit of a
healthier twist and what makes it a
little bit healthier is that I’m using
fat-free Greek yogurt but I’ll get to
that in a bit but the ingredients for
the small batch potato salad are a cup
of chopped celery half of a small red
onion that I’m dicing pretty fine but
you can use any onion that you like I
prefer the red in potato salad you’re
going to need salt you’re going to need
some fresh cracked black
pepper and you’re going to need some
dill so those are the ingredients that
you need to make the potato salad and in
the pot I have three Yukon Gold potatoes
boiling just until they’re fork tender
and then I rinse them with cold water to
stop them from cooking okay so these are
fork tender I rinse them with cold water
to stop them from cooking I drain them
really well and now I’m going to get
started on making the salad so the first
thing I’m going to add is the cup of
chopped
celery just like that then I’m going to
add the half of a chopped Red Onion then
I’m going to add 3/4 of a cup of
fat-free Greek yogurt sauce so this is
fat-free Greek yogurt it has Dill salt
pepper a little garlic powder a splash
of vinegar and cucumber it’s like a
ziziki sauce homemade and I’m using 3/4
of a cup of that you’re going to
sprinkle in some salt you’re going to do
some fresh cracked black pepper salt and
pepper to taste it’s a/4 tpoon of salt
that I’m doing and about 1/4 teaspoon of
black
pepper
okay and this is just an alternative to
using traditional mayonnaise in potato
salad the Greek yogurt
this smells so
yummy all right so now we’re going to
give it a taste for salt and pepper and
maybe I want a little bit more acidity
so I might do another splash of vinegar
but we will
see all
right
so let’s give it the
taste let’s see
here okay here we go
M it tastes delicious but it definitely
needs a little bit more pow
so I’m going to do another splash of
apple cider there was apple cider
already in the Greek yogurt sauce that I
made but with the potato which is Bland
obviously it needs some more so we’re
going to do some more black pepper
and a little more
Dill all right let’s give this another
mix and we’ll give it one more
taste so this was three good siiz Yukon
Gold potatoes 3/4 of a cup of Greek
yogurt sauce if you don’t make your own
you can just buy store bought um ziziki
sauce and it has three stocks of
celery half of a medium red
onion salt pepper to
taste and a splash of
vinegar all right give it another
taste go
okay
perfect that is exactly what it needed a
splash more of vinegar a little extra
dill and black
pepper perfect tastes delicious so this
is a little bit of a healthier version
than traditional potato salad use
yourself some Greek yogurt fat-free
Greek yogurt let me PL this up and pop
it in the fridge
okay so I’m going to put this in a bowl
and I’m going to cover it with Saran
Wrap and it’s going to go in the fridge
overnight not overnight it’s going to
sit in the fridge all
day and let the flavors meld
together while them at
work and tonight for dinner this is
going to be delicious get some grilled
chicken whatever else we decide to have
with it the longer it gets to sit and
let the flavors melt
delicious okay folks and there you have
it Greek yogurt potato salad
yum give it a try it is delicious and if
you’re trying to watch your calories a
little bit it’s just a healthier option
versus using
mayonnaise and it tastes really
