So the obvious, I made potato wedges in the air fryer instead of mashed. It’s pretty hot today and I really didn’t want to be in the kitchen but this was a yummy plate. Has a bit of everything.

I grilled corn on the cob yesterday and had some leftovers so I just used that instead of the canned corn. Frying the chicken was fast in the fry baby. I really enjoy the fry seasoning on it. I added a little bit of flour to the panko and it kept the coating on better while being fried.

I’ll keep the canned corn and I always have potatoes on hand so I’ll recreate this dish properly another time.
