This is my first time making sourdough, no idea if it’s “good”. I think it was a little denser than I thought it was going to be? Looking for thoughts. I used 1 cup starter, 1.25 cups water, 3 cups all purpose, 1 tsp salt. I have a feeling I didn’t know the stretch and folds the best and I didn’t really know what I was doing with the shaping. I did fridge it overnight and didn’t bake until 5pm so it was in the fridge for a little longer, and I probably could have taken it out of the fridge and let it fully come to temp.

    having it in the fridge longer doesnt cause any issues (unless your fridge temp isnt cold enough and it continues fermenting). some people cold proof for even up to 3 days to develop flavor. also, its the norm to bake straight out of the fridge. you get a better oven spring that way.

    How’s the crust? I just posted a post of my first loaf too. It’s amazing except for the crust is too crunchy for me. If yours is soft and you have some tips, feel free to share! (:
