Tiramisu Cake Recipe
Ingredients
Cookies:
140g egg yolks
240g egg whites
200g sugar (divided equally between yolks and whites)
240g all-purpose flour
Cream:
3g gelatin leaves
70g sugar
100g egg yolks
300g mascarpone cheese
100g heavy cream
Coffee Syrup:
50g sugar
300g espresso
Instructions
1. Prepare the Coffee Syrup:
Combine the espresso and sugar in a small saucepan. Heat over medium until the sugar has completely dissolved. Set aside to cool.
2. Make the Cookies:
Preheat your oven to 160°C (320°F) and line a baking tray with parchment paper.
Beat the egg yolks with half the sugar (100g) until thick and pale.
In a separate bowl, whip the egg whites to soft peaks, then gradually add the remaining 100g of sugar, continuing to beat until stiff peaks form.
Gently fold the whipped egg whites into the yolk mixture.
Sift the all-purpose flour over the mixture and fold gently until smooth.
Pipe the batter onto the prepared tray in strips about 2.5cm wide and 8cm long, spacing them to allow for expansion.
Bake for 10-15 minutes, or until cookies are lightly golden and firm. Allow to cool on the tray.
3. Prepare the Cream:
Soak the gelatin leaves in cold water until soft.
Make a sugar syrup by combining 70g sugar with just enough water to moisten it. Heat until the sugar dissolves and the syrup begins to simmer.
Whip the egg yolks with an electric mixer or whisk. When the syrup reaches 118°C (244°F), gradually pour it into the yolks, continuing to whip until the mixture is thick, pale, and cooled.
Drain the gelatin and dissolve it in the warm yolk mixture.
Whip the heavy cream to soft peaks.
Whisk the mascarpone cheese until smooth, then mix in the cooled yolk and gelatin mixture.
Fold the whipped cream into the mascarpone mixture until combined.
4. Assemble the Tiramisu:
Dip each cookie strip briefly into the coffee syrup and arrange a layer at the bottom of your serving dish.
Spread a layer of mascarpone cream over the cookies.
Repeat layering, finishing with cream on top.
Refrigerate for at least 4 hours to set.
5. Serving:
Dust the top with cocoa powder before serving.
