Hello friends!

Continuing on with our series of pantry cooking here is a super simple, inexpensive and tasty casserole. I bought most of these ingredients at the Dollarama here in Canada so it’s super cheap.

Recipe:
Preheat your oven to 350F.
Spray a large casserole dish with oil.
Layer in one package of potato gnocchi.
Drain a jar of roasted red peppers, chop and layer on top.
Drain & chop a jar of marinated artichoke hearts and layer on top.
Drain a can of black olives and sprinkle on top.
Into a can of undrained diced italian tomatoes, add 1 tsp italian seasoning and 1 tsp minced garlic. Stir and pour over top of the other ingredients in the casserole dish.
Add pepper and salt to taste.
Cover with foil or a lid and bake for 30 minutes.
Before serving, sprinkle 1/4 cup of vegan parmesan cheese.

Feel free to make whatever substitutions you want. For example sun-dried tomatoes or green peppers, etc.

hey everyone welcome back I was
outside planting some plants playing
around with flowers and um getting
hungry and realized that I should
probably make something for dinner and
then I realized I should probably film
it for you guys I didn’t post a cooking
video last Wednesday but cooking videos
are sort of bonus videos Wednesday
videos are kind of bonus V videos
because this is not my first job this is
not my main job in fact I have my
full-time job and then two side hustles
of which this is one of them so life is
pretty busy today I’m going to continue
on with our series of use whatever
whatever is in your cupboard to make
something delicious and filling and
inexpensive and the majority of these
ingredients I actually bought at the at
Dollarama here in Canada uh so they’re
not expensive what we’re making today is
Italian
noi bake uh and it’s going to be really
easy really simple let me show you the
ingredients okay here are the
ingredients basically just items that I
found in my pantry I always keep jars of
roasted red peppers in my pantry and
then I’ve got some Italian diced
tomatoes any diced tomatoes will do but
why not go with ones that are already
have some seasonings some marinated
artichoke
hearts black olives if you don’t like
black goles leave them out actually
leave anything out that you don’t like
some noi potato
noi um minced garlic Italian seasoning
some grated Parmesan cheese I’m really
liking this nourish brand of grated
plant-based Parmesan it’s actually quite
good and then uh some oil to spray the
casserole dish so that nothing sticks
all right so like you saw super
straightforward ingredients and actually
I bought
my minced garlic at the Dollarama my
roasted red peppers at the Dollarama
that’s a great these are a great deal at
the Dollarama the marinated Arro carts
there the tin of black olives was from
there and the nooi was from there um and
they sell spices so you could literally
make this whole dish from the dollar
store they also have tomatoes I’m going
to spray the casserole dish
just so that nothing sticks to it don’t
know why I shook
that it’s a very minimal amount of oil
that we’re using here though the Artio
carts are marinated in
oil all right so that’s ready and now
let’s just put the noi in there and
we’re not cooking every anything ahead
of time because pretty much every well
everything is is cooked
already um except for the Nuki and it
just needs to it’ll cook in the juices
from the tomatoes you’ll see what I mean
so let’s drop those in there and break
up any
clumps and just set
that aside the next thing we’re going to
do is drain our roasted red peppers

the roasted red peppers are also uh also
in oil a little bit of oil and water
so now I’m going to chop these because
obviously they are in big chunks so
we’re going to chop these up into
smaller pieces bite-sized
pieces this is such a easy dump and bake
recipe almost forgot preheat your oven
to 350 so
350° F do not know what that is in
Celsius for a country that works in
Celsius in Canada we still use
Fahrenheit for
cooking don’t ask me
why so now I’m going to layer the um
roasted red peppers on with the
Yi
okay so that’s the roasted red
peppers and now we’re going
to do the same with the archo carts
so I would suggest that you put whatever
you like in there if you don’t like
olives like I said don’t put olives I
love olives um and if you don’t like
artichoke carts don’t put those you
could put sundried tomatoes in here you
could put um other roasted
Peppers you could put mush mushrooms all
right and now I’m just going to sprinkle
these on over top of
everything okay so the next thing we’re
going to do is add the uh
olives I’m Haven decided how many I’m
going to
use whatever I don’t use I’ll just
freeze
is it looking
good
yum all right so that’s probably half a
can open up your tin of tomatoes
and let’s mix in the
garlic and
um Italian seasoning right into the
tinted Tomatoes it’ll just make life
easier than trying
to trying to mix it in after so I’m just
going to eyeball whatever you want for
Italian seasoning you could use whatever
seasonings you want teaspoon of
garlic so now I’m going to pour this in
so we’re using the juices and all
because that’s what’s going to cook the
noi and make a nice little sauce so
let’s try and get this whoops make sure
you make a
mess um as I always seem to
do let’s get this spread over
top the only other thing I’m going to
put on here is some pepper not adding
salt but feel free to Salt it to your
taste but the every one of those
ingredients has salt already so I don’t
think you need addad
salt and now I’m going to cover this
with
foil or if your casserole dish has a lid
cover it with the lid

okay so we’re going to bake this at 350
for 30 minutes and then I’m going to
remove the lid give it a little
stir um and add the parmesan so I’ll see
you back here when that’s done
all right we’re going to take this
sucker
out and we’re going to add our parmesan
so see how it
looks smells really good in here
I just wish there was M
Vision so I’m going to stir this oh yeah
those noi are nice and
pillowy I don’t know that’s probably
about a/4 cup whatever you
want whatever you want want those noi
are really nice and soft just going to
stir it
enough to get the parmesan
Blended and then we’re going to Plate it
so I’m just going to put a little bit of
Parmesan on top little
extra then I’m going to be smart and let
it cool off for a second before I taste
it is this the prettiest meal I’ve ever
made no
but that’s okay it’s everyday cooking it
doesn’t have to be pretty I did add a
little dried bowel on top just to make
it prettier uh but no
all right so I’m going
to burn
myself of
course or maybe
not
mhm yep
yum just really easy simple
ingredients it’s nice and fresh it’s not
heavy the noi is really the only carb in
here is the only carb in here though all
vegetables have fat protein and
carbs now if you don’t want to use diced
tomatoes or you don’t have any use
whatever pasta sauce you have or you
could
substitute um like chopped tomatoes and
a little veggie broth in there but it’s
just so simple to just open up those
containers whoa not sure why my light
went really bright all of a sudden but
I’m awake
now anyways um it’s just super simple
easy to make um again leave whatever
ingredients you don’t like this is
really good with sundried tomatoes like
I said um and I particularly in
particular really enjoy the olives um
so I always put them
in I just can’t get one ah there
mhm let me know if you try it let me

and enjoy this for dinner I have lots
left over for leftovers for the week
which is awesome because it’s nice to
cook once on Sunday and have meals for
at least until Wednesday anyways guys I

  7. This is a definite try for me. Looks yummy and super easy. Black olives are a must! They were gold in my family. We all would sneak them before special dinners. Yes, I'm a thief, so much so that a nephew of mine buys me 2 cans of black olives a Christmas and has his children give them to me as their gifts😂

  11. Looks so delicious! I think that cheese is new. I’ve never seen it before. I checked my grocery stores today and that brand is low on inventory. That company has a variety of vegan cheeses. I’m definitely going to buy what is available, plus the other ingredients to try your recipe. 🙌
