**MORROCAN BEET SALAD **

Ingredients:
– 3 medium-sized beets
– 1 red onion, thinly sliced
– 1/4 cup arugula (or you can also add cilantro and/or fresh mint)
– 1/4 cup goat cheese or feta cheese
– 1/4 cup walnuts

Dressing:
– 3 tablespoons lemon juice
– 3 tablespoons olive oil
– 3 cloves garlic, minced
– Salt to taste
– Pepper to taste

Instructions:
1. Boil the beets in water until they become soft.
2. Remove the skin and chop them into smaller pieces.
3. In a large bowl, combine the beets with the onions, arugula, and optional herbs like mint or cilantro.
4. Pour the dressing over the mixture.
5. Add your preferred cheese and nuts to the bowl, and mix everything together.
