hi everybody Welcome or welcome back if
this is not your first time here welcome
to meatless Monday meil plan originally
I was doing it midweek and then I
decided you know what I think we’re
going to change it around we’re going to
do meatless
Monday we
are like I would say 98%
meatless and by 98% I
mean you know every once in a while
we’ll have pepperoni pizza or you know
something like that but for the most
part or if our neighbors have meat that
they bring over from the cows that
they’ve raised you know we’ll do that
that kind of thing and the
reason behind that is because
a few years ago Wes had back surgery
where they fused his
spine in a couple of spots since then he
has been experimenting with pain
management well even before then really
experimenting with pain management and
what he found was it was a lot of
processed foods so not just processed
Meats but processed foods Al together so
we started looking at at ways to eat a
more Whole
Food uh vegetarian
diet and that seems to keep the
inflammation down for him so that he is
not in severe
pain he knows when he has you know
either eaten too many things that have
processed stuff in them so even like box
meals um like do anan’s rice the uh
prepared soup mixes all of those things
even like canned soups all of those
things that have the processed stuff in
them will bug his back uh bug his his uh
inflammation so we really do try to stay
away from all of that stuff it’s hard it
is really really hard because even like
vegan alter uh meat Alternatives like
impossible beyond meat those are all
highly processed too so I guess what I’m
saying is it’s not that we’re trying to
get away from all the meat or it’s just
we’re trying to get away from all of
everything processed so if it’s been
processed we try really hard not to eat
it I’m going to do spinach in these so
Monday I am this is going to be a really
lazy week for me as far as cooking it’s
going to be really easy very very lowkey
I’m going to do vegetable pin wheels and
I know you guys saw this on last week’s
as well but I’m going to tell you for
portability ease of making them and
storing them in the fridge so that I can
just grab one when I need a snack has
been a wonderful Lifesaver it’s quick
and easy to do so I’m going to do cream
cheese spinach
cucumbers and I’ll probably throw some
I’m not going to to do shredded carrots
but I’ll do I’ll take the carrots that I
have in the fridge and I’ll make them
ribbon so that they’re thinner to roll
up I don’t really like the matchick
carrots cuz they poke through the
burrito so they just they just make a
mess and then I’ll probably add another
kind of lettuce in there so that I have
plenty of greens and then of course
fresh chopped
onions and then any seasonings I can
think of and then I’m going to do I
can’t decide so I’m just going to put
spicy meatballs and rice it’s either
going to be
a uh sorry train of thought lost like a
general Chow Asian inspired or an orange
sauce to go over the meatballs and then
rice so I’m not going to write down any
recipe on this one because I’m not sure
what I’m going to do and then I’ll use
the impossible meatballs for that you
can make your own own meatless meatballs
as well like Falafel is that what how
you spell it I think so I think that’s
how you say it I don’t know how to spell
it you could totally do that as well and
then I’m going to make a
chickpea salad for sandwiches it’s like
chicken salad sandwiches chicken salad
but it’s chickpea salad made almost the
exact same way um you put in your
mayonnaise your salt and pepper your
pickles all all that kind of stuff and
then you smash up your chickpeas and
make it into like a like if you would a
a chicken salad or a tuna salad excuse
me mustard and you can add like I said
anything that you would normally add to
the
other I’m going to add in here what did
I get put in here why am I having a a
memory lapse memory lapse
uh okay well that is okay there was
something oh good grief
celery I don’t know why I was having a
difficult time with that and then if you
have been craving Sloppy Joe’s but
you’re like yeah I really want to try a
meatless Monday try them with
lentils and the great thing about
lentils if you get dried lentils they’re
super duper cheap you can soak them and
they take hardly any time to cook like
if you put them in the sloppy joe sauce
they will just cook up with the rest of
that Tomatoes paste stuff and they’ll
taste amazing so in this one I am
getting one can of the sloppy joe
pre-made
mix I could make it myself but again I
told you I’m kind of being lazy this
week and then I’ve got burger buns to go
with this
one and then I’m going to do french
fries on the side with that and then
Friday for the last meal of the week I’m
going with my alltime
standby just good favorite meal
spaghetti and
meatballs the reason I’m doing two
meatball meals is because I I’ll have
that big pack of meatballs and I want to
use them so so two meals one bag of
Meatballs it’ll be perfect one will be
an Asian inspired while the other one is
going to be more you know
Italian so for this one I’m just going
to need spaghetti
noodles and I like the thin spaghetti
noodles uh
sauce I do make my own sauce and can it
and then meatballs
and then down here I’m going to White
out Saturday and Sunday because I don’t
actually meal plan for Saturday and
Sunday this is where I’m going to put
uhoh ran out of white Out friends that’s
okay I’m wondering if I can cheat a bit
and just use my pen M no that’s okay
let’s do this we’ll do one better how’s
that let’s go in with the wash tape
and let’s just put it
down right
there we’ll go in
here so this is going to
be my
pantry fridge and freezer
perfect so that takes care of next
week’s meal plan let me know if you try

and then it’s the 2024 April recipes I’m
getting ready to go through and revamp
for May it’s going to be
May and so the next plan with me that we
do meatless Monday I’ll have the 31
meals all planned out for the month of
May and then we’ll we’ll do that so I’m
excited for that really excited for that

  1. Hi!!😊 These sound so yummy! I don’t know what we’re having for dinner yet this week😬 I know I’m making mushroom Swiss burgers for Monday, oh that’s today😂😂 but I’m going grocery shopping Tuesday for some fresh stuff but I’m not sure what they’ll have, what’ll be on sale and what will look good (like fresh and not wilty). As I’ve gotten older, I can definitely feel a difference in how my body feels when I eat fresh whole foods and how it feels when I just eat whatever. I try to make good choices but sometimes it feels like a juggling act between budget and healthy and this is on sale but that lettuce is brown and oye lol I’m glad that whole and unprocessed helps We to feel better! That’s so awesome!! I greatly enjoyed this video, I love the washi it’s such a pretty pop of color!
