this morning on today food we are
cooking up some special dishes for
Passover from the new cookbook the
Jewish holiday table a world of recipes
traditions and stories to celebrate all
year long haa raport is the culinary
manager at the Jewish food society and
was the lead recipe tester for the book
hi good morning morning we are all
fascinated because there’s some
ingredients here we haven’t necessarily
used before and we all love matal soup
here yes good happy to hear that yes
where do we start with I just see a
chicken in some water here yes okay so
we’re going to get started with making a
chicken soup matab Bal Alam Mexicana
okay Fusion there exactly and this is a
recipe from our brand new cookbook which
is really a collection of the best
stories and recipes from Jewish families
around the world okay so really
showcasing the diversity of Jewish
culinary Cuisine okay so we’ll get
started we have a chicken in the pot
right here check we are going to add
some of these aromatics to the soup yes
what do we have we got some onion we
have some fresh parsley you can add the
jalapeno just like that just like that
just add it straight in and we got some
leaks I thought you were going to
sayro okay yes and then I like to bring
this to a
boil and kind of let that all cook okay
so you’re making a stock here so we’re
making a stock and then I like to simmer
the stock while it boils and just skim
off the impurities how long will you s
that for um around an hour and a half
and skimming it will give us a really
clear beautiful broth now matz balls and
now we’re going to make the Mozza balls
the best part uh sinkers or floaters you
guys like fluffy fluffy moall I like
floaty floaty cool perfect well this
recipe is going to give you that we have
our mozal over here we’re going to add
some salt baking powder baking soda
black pepper and then we’re going to go
ahead and add all of the wet ingredients
to this bowl over here we’ve got some
eggs fresh herbs which give these Moz
balls a really beautiful look do you
want to add these
onions and then this is my favorite
ingredient to use in a Jewish Kitchen
schaltz Chicken Fat it’s like liquid so
we’re going to mix all this together so
you can buy that you can render it you
can use olive oil whatever you got we
want to save some time for the cookies
so absolutely add this to that yeah
we’re going to add this and perfect okay
stir that together and these are whipped
egg whites right these are whipped egg
whites and this is the secret to this
recipe they give you a really really
fluffy perfect mozah ball that’s going
to just rise right to the top of the
broth got about 60 seconds almost time
right so we’ve got the you’ve got this
so we’ve got these I like to wet my
hands when I’m shaping the matah balls
oh it smells take a tablespoon or two
roll these out here and then you just
add them to the
broth this is terrific I like the
Jalapeno in there too all right really
quickly on on the on the cookies oh my
go pistachio cookies delicious mhm good
I’m so happy these look pretty simple to
make yeah so these cookies are uh really
delicious four ingredient you just grind
the pistachios you add the sugar the
salt this is my favorite ingredient rose
water has a really floral lovely tou
rose water rose water for my face orange
blossom water too and these cookies are
made to celebrate mimuna it’s an end of
Passover holiday celebration that
Moroccan Jewish Family celebrate oo yeah
and then they that’s how long do you
bake them you bake them for 18 minutes
350 and then you got this really crunchy
beautiful ha thank you so much are
