****Ingredients for 2:
– 5 ounces whole wheat penne pasta – can use any type of pasta you’d like
– 7oz turkey sausage links – can use any type of sausage
– 2 cups raw Napa cabbage, cleaned and chopped – can use Swiss chard, kale or spinach
– 1 tablespoon olive oil, divided
– 2 green onion, chopped
– 1/2 tablespoon soy sauce
– 1/2 tablespoon oyster sauce
– 1 teaspoon sugar
– 1/4 teaspoon black pepper
– 1 tablespoon butter
***Directions:
1. Cook pasta according to the package instructions and drain well.
2. Meanwhile, in a large skillet over high heat add 1/2 tablespoon of olive oil and cook the sausage until brown and cooked through, about 5-7 minutes, turning every few minutes to brown. Remove the sausage from the skillet and slice.
3. In the same skillet, add the remaining 1/2 tablespoon of olive oil to the pan and add in the Napa cabbage. Cook, stirring occasionally until the cabbage reduces, about 2 minutes
4. Then, add pasta, sausage, soy sauce, oyster sauce, sugar, butter and pepper in the skillet, mix well and cook for about 3 more minutes. Turn off the heat, then top with chopped green onion.
