I brought some Thai Chilis back from Bangkok for my girlfriend and we’ve been using it to season up dishes she makes, garlic rice etc. they are so Godamn flavorful!! That got me thinking I would love to try a Thai chili hot sauce but not sure if any exist. Any info ??

    Thai chilis confuse me. Every Thai chili sauce I’ve had has been very flavorful and good, but extremely sweet and thick. Nothing wrong with that, every sauce has its purpose. Mae Ploy is a very sweet Thai chili sauce but I love it on ground beef tacos when mixed with a hotter sauce.

    But I worked for a restaurant that used Thai chilis to make their hot honey and that shit was HOT. Like at least an extra hot level at most wing places.

    So I know the heat potential of Thai chilis, but every sauce I’ve had that utilizes them only makes sweet mild sauces more fit for dipping than dabbing. I don’t get it.

    With that said, Mae Ploy and Melinda’s sweet Thai chili are pretty good and probably readily available. I’m sure others will have better suggestions.

    Thai Chili Sauce, Hmong pepper sauce (without peanuts, my personal favorite).

    The issue with Birds Eye Peppers is that they are very very angry peppers. They are small but they have an immediate heat and it lingers for a bit.

    I can’t recommend Hmong pepper sauce enough.
    Super easy to make, just ingredients in a blender with a small handful of peppers and add more as needed, the more add the hotter it gets exponentially, not like a little bit hotter but a lot hotter so being sparingly with them.

    It goes great with any meat, like on a steak, on a burger, in a taco, on a burrito, even on chicken.

    They also work well in a salsa.

    I took a bunch and fermented them. Then I processed them down into a paste. So good.

    I have about 10 of those plants growing in my garden this year. I hope they are hot as I’ve never grown them before.
