Lemon Herb Grilled Chicken
serves 4

This is so lemony and herby. Every time I make it I wonder why I don’t make it more often!?
It goes wonderfully with my Apple, Celery and Snap Pea Salad! Very fresh and summery!

1/3 cup extra virgin olive oil
1 tablespoon lemon zest
3 tablespoons freshly squeezed lemon juice
2 tablespoons finely chopped fresh cilantro
2 tablespoons finely chopped italian parsley
1 teaspoon finely chopped fresh rosemary
1 teaspoon finely chopped fresh thyme
1/2 teaspoon finely chopped fresh oregano
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 cloves garlic, minced
4 boneless, skinless chicken breasts, pounded to 1/2 inch thick

In a small bowl combine all ingredients except chicken. Place chicken breasts in a ziplock bag,
pour in marinade and massage into chicken. Let marinate in refrigerator for up to 2 hours.
Preheat grill to medium high heat. Coat grill with cooking spray. Remove breasts from marinade
and pat dry a bit (just so the oil is not dripping into the flames). Place on grill and cook until
cooked through, about 3 minutes per side. Let rest 5 minutes before serving.

hi everybody Holly here from holiday any
day and today we’re gonna make a lemon
herb grilled chicken
super simple nice and fresh summery
marinade um and real easy didn’t just
jazz up your chicken breast so I’ve got
some extra virgin olive oil to this I’m
gonna add some fresh lemon juice okay
we’re gonna add some lemon zest uh-huh
some fresh chopped garlic and now we’ll
add the herbs so what I’ve got here I
have got some cilantro I’ve got some
Italian parsley I’ve got some thyme and
I’ve got just a little bit of rosemary
it’s a little bit of rosemary goes a
long way
pop this over here let’s go ahead and
give it a little bit salt a little bit
of fresh pepper
okay let’s just mix this up I think this
would be great probably on halibut – um
how about sea bass son Jonah white fish
hmm it’s almost like chimichurri sauce
looking okay so there’s that then I’m
going to give the book bag I have
pounded two chicken breasts because we
know we have to pound them so they cook
evenly
so if pound I’m fairly thin there’s a
new name in here I count them between
two slices of pasta grab another one and
talk about easy and I wouldn’t marinade
this for too much longer than a couple
hours because all that lemon juice is
gonna probably start it cooking a little
bit okay so to this let’s go ahead and
just give this guy up or give them a
nice little rub massage move all those
herbs around
okay let’s wrap it around good I always
make sure I put this in a little either
on a plate or on a pyrex so in case it
happens to leak and just push your air
out and pop that guy in the fridge a
couple of hours no longer than that and
then we’ll be ready to grill it okay
I’ve got my chicky out of the fridge
it’s been a couple hours after the
there’s a buck back as you can see just
pull it out and flop it on the grill and
be careful to wipe off some of the oil
because you don’t want it to flare up
just don’t slop it on there so there we
go
I’ve already sprayed my girl cooking
spray okay so we’re gonna give these
dudes probably two or three minutes
aside they’ll be real real quick close
up to keep it hot in there

okay guys it’s been maybe two three
minutes per side let’s see how they look
mmm snow so good those fresh herbs are
just wonderful
look how good those look see how quick
and they cook so evenly because I
pounded them first
okay now I’m gonna let these rest for
maybe five minutes I’ll tent them and
then I’m going to show you how I’m gonna
serve them okay so I let my chicken rest
for about 5-10 minutes I sliced it and
I’ve got it on this gorgeous platter
with the super yummy crispy slaw it’s
snap pea red onion Granny Smith and the
same herbs that are basically in the
chicken and the recipe is on the website
so check that out but let’s try this
chicken cuz it looks to die for and it
smells so good I’m just gonna take this
little corner piece I think I want to
grab a little bit of slaw or at it maybe
some apple give this a taste
hmm it’s true Irby Irby and lemony and a
sweet crunch of the Apple mm-hmm that’s
so good that was like perfect for the
end of summer perfect give it a go
it’s easy breezy
