I baked my first loaf when my starter was only two weeks old. Now it’s 7 weeks old and this sandwich bread has SO much more depth of flavor and sour tang! Apparently my family of five and two cats have good yeasts 🤔😬😆

Here’s the recipe. I confess to light kneading rather than stretch & folds. We like a little tighter crumb for our sandwich bread.
