I had planned on making some Dutch crunch subs for some ham and cantimpalo chorizo (and provolone that I added once I realized I had left it out 😂) today, and just as I was getting ready for the final proof, a four-hour blackout. This is not an uncommon occurrence, but it never gets less infuriating. Rather than throw out my subs in a fit of rage, I put them in the fridge thinking it would be six hours without power, but they cut it short today. My subs weren’t deflated, so I thought I might as well make the topping again and bake them. And even if over-proofed, these rolls still baked up absolutely delicious and the sandwich rocked. I made a vinaigrette with red onion, minced garlic, minced sun-dried tomatoes, and oregano and basil from our yard. Shredded iceberg and shaved onion, and equal parts mayo and mustard on the bread. Dutch crunch is awesome for subs!

    I just had the best sandwich I’ve ever tasted last week. It looks similar. For any Utahans or traveling folk reading this…. Sandwich Queen in Payson. You won’t regret it.
