hey everybody it’s Kim and we’re back in
Kim’s kitchen so happy that you could
join me again and for those of you that
don’t know me I’m a certified
professional stress and weight
management health coach my service is
about helping people eat healthier to
relieve their stress and maintain their
weight so let’s what are we making today
I know I know that you wanted to cook
more lentils I know you wanted more
lentils in your diet it’s because
they’re an awesome food so today we are
going to be making a Moroccan sweet
potato and lentil soup so are you ready
let’s get going okay let’s roll up our
sleeves and get into the ingredients
that we’ll need so grab a pen and paper
if you haven’t already write this down
so we’re going to start off with uh 3
tablespoons
of um extra virgin olive oil excuse me
extra virgin coconut oil and I’m going
to use this pan I love this pan it has a
glass lid on top of it so we can see the
soup cooking inside I’m going to put the
uh 3 tablespoons of um coconut oil into
the pan get it melted and then I am
going to chop up some um onion I want a
cup and a half so I’m just going to use
these three onions here I’m going to
peel them and chop them all up dice them
up
small then I’m also going to take this
large carrot and peel it and uh dice it
up also too about the same size of the
pieces of onion and I’m going to get
them cooking inside the pan in the
meantime I’m going to chop up some um um
garlic so I’ve got three nice large
cloves of garlic and then I’ve also got
a piece of ginger so I’m going to be
chop chopping up my garlic fairly fine
and then this piece of Ginger I want two
tablespoons with worth so I think after
I peel and chop this up very finely I’ll
probably have two tablespoons worth okay
and I’m going to put those in the pan
along with the um chopped onion and get
them sauteing so that they’re a little
bit cooked before we add everything else
so the next thing I’m going to do is
I’ve got a little um you know me I love
putting everything together in a little
bowl so I’ve already got a t a teaspoon
of cor uh excuse me ground coriander
then I’m going to add two teaspoons of
my ground uh black cumin seed if you
don’t have any just use regular cumin
ground cumin and then I’m going to do a
teaspoon of smoked paprika again into
the dish a teaspoon of
cinnamon a teaspoon of turmeric and also
too I’m going to put in 2 tpoon
of uh salt so after we’ve got everything
all soate up in the pan and everything
we’re going to add um our spices we’ll
throw them all in we’ll throw in um six
uh cups of nicely uh filtered water so
make sure that you’re using filtered
water and then I’m also going to put in
one cup of green lentils so already I’m
going to take a bowl and my little uh
filter here I’m going to put the cup of
lentils inside the bowl and run them
underneath some cold water to get them
rinsed and and um uh get them rinsed and
cleaned I guess and then I’m going to
also put in a can of diced tomatoes so
in goes can of diced tomatoes along with
everything
else and then we’re going to start
cooking those for for um 40 minutes once
we bring it back to a boil we’re going
to be cooking for 40 minutes so that’s
what’s happening did you get all those
ingredients down well go out get them
find them get to work and also too the
sweet potatoes don’t forget the sweet
potatoes I need um four cups of sweet
potatoes and I need them peeled and
diced into half2 inch um little uh dice
them into half in little squares okay so
there’s lot of peeling going on here a
lot of dicing and chopping so that’s
going to keep me video um busy until I
see you in the next video and at that
point I have already got my carrot and
onion cooking inside of there with my
garlic and my Ginger chopped very fine
we don’t want to eat chunks of Ginger so
make sure you chop it nice and fine and
then we’ll add the rest of Vegeta and
I’ll see you back in a little while
