Fletcher joining us from Jimmy V’s Mike
thanks for coming on here today no
problem okay what type of burger are you
making so we are doing a pizza burger
today um it’s not not too complicated uh
it’s potato um grilled potato bun y um
um never Frozen uh beef from locally
sourced um oh that’s the best part about
that so local beef so never Frozen yeah
and then um pepperoni mozzarella and
then spicy marinara sauce and then um
it’s covered with uh parmesan and um
parsley okay I love how of course your
pizza place first and foremost and now
you’re partaking in the burger slam so I
think the pepperoni pizza burger is very
very fitting for yeah we thought it was
yeah pretty app for really don’t have a
whole lot going on here ingredient wise
so Simplicity I think is the key
ingredient yeah yeah I think that’s here
in the case um so I see Mike that you
have your burgers or your pan all ready
yep ready to go so again nonfrozen beef
yeah unfrozen beef locally and it’s
pretty thin too sometimes they really
thick yeah third pound nice and we have
yeah okay then yeah usually just let it
cook for about um two 3 minutes aside
yep it’s pretty quick um and then yeah
you just kind of while that is being
done
it’s a usually toast the bun okay and
then while you’re doing that I kind of
want to know the inspiration behind
finding the whole pizza burger um yeah
it’s uh we well of course the that
competition and then um we were
talking um like our kitchen manager was
asking us um to come up with some ideas
and stuff for different types of burgers
that we could do um like we played
around with a few different types but
then ultimately deciding on the pizza
burger of course is this your only
Burger that’s on the menu or do you have
other ones okay no no we have uh like uh
pretty normal Burgers other than this um
but this one’s going to be the special
one yeah the other ones are just um more
classic burgers in that sense um so yeah
we thought you know specialty Burger
Kind of there you go you know make make
a little noise with it so fair enough
okay I want to in one of the owners here
Mike if you don’t mind no problem Ryan
Dicker if you could come in here again
you’re one of the owners of Jimmy V’s I
want to know from you here what is your
role I guess in the whole um food
industry regarding Jimmy V’s and then is
nardello at all tied to that oh
excellent question you put me on the
spot uh I give you a heads up yeah first
off uh you know I’m one of the owners of
Jimmy bees and and we do have a a
handful of other restaurants in bismar
and Mandan uh Jimmy V stuck out to us
because of the the great food and the
great staff um so how does it tie into
the nardell the nard the nardell are who
started Jimmy be’s they also own
nardello’s pizza and they have a great
culture uh that they put with both their
food and and their employees and what
what happened that spurred them want to
uh concentrate on just the nardello’s
pizza was to easy make their life a
little easier and so that’s where we
came in
uh and the nardell have been great
mentors and and great friends of ours
and so it’s great I I think uh uh we’re
excited we’re fairly new only a few
months in we have Great Cooks like uh
chef Mike and uh uh this burger you know
they they asked us if we wanteded to to
come together and and and figure out a
great burger for the burger slam of
course Don with the downtowners with uh
working with us so we just let the cooks
decide and they they came up with a
great burger idea I love it it I can’t
wait to try it and we’re going to try it
um and so another thing here I’m a
Jersey girl born and raised right I
moved to North Dakota what am I going to
do about my pizza thing pizza’s huge out
east so how how is your pizza kind of
tied to the east coast and is it
different than maybe other ones around
yeah so so our pizza is a uh New York
style pizza so it’s a a thin crust it’s
hand stretched we make all of our own
dough inhouse we make all of our sauce
in house um and it’s it is similar to
Jimmy V’s or sorry nardello’s Pizza as
well um there are some changes I’d uh
challenge everyone to try them both I
will say I’m pretty much a regular at
Jimmy be so I love sitting there the
Ambiance is really really fun too and
you guys have trivia in events all the
time so all right we want to thank you
for coming down here today but I want to
continue with the burger so thanks Ryan
much appreciated okay did I see you flip
the burger here yeah so I just flipped
the burger
um now and you’re keeping it cooking so
is the goal to get it medium do you take
requests at all on how to cook it or is
it kind of like one temperature that’s
it yeah so we usually just try to shoot
for um like medium about there medium
well done um but yeah uh you can do
requests um okay awesome if you want cuz
it’s thin enough so it’s harder to get
the tempature it is it is so like that’s
why a lot of times
um sorry NOP you’re good uh yeah so we
like to see how the whole process is so
we are toasting the Buns yep yeah
so good toast on there yeah do we need a
plate okay let me see if I can find one
over here there we
go does it come with fries at all or is
that an extra oh perfect no it will come
with fries or onion rings actually um so
good pairing for the two yes now I also
noticed here that you had some garlic
butter is that yeah sorry garlic
oil yeah we cooked the the bread or
sorry the Buns Y in it and everything I
like it and we are down to two more
minutes here I think we can get it done
yeah so this
burger
is so just making sure it’s juicy I love
that tactic I do that at home too that
too and then also if uh if it’s running
clear instead of red it’s it’s done yeah
so you don’t have to cuz is that hard as
a restaurant cook Chef um to get the
right temperature for meat how do you
make sure I mean therometer therometer
usually um is the best way to do it yeah
um that’s always a a thing when I run
into home cooking myself I always have
to Google what’s the temperature of
cooked chicken yeah yeah and I mean I’ve
been doing this for a while so I it’s
kind of you you learn it by feel too all
good yep okay so tomato sauce I’m
assuming that’s the pizza sauce yep the
spicy marinara sauce and then usually uh
didn’t have shredded or sorry we didn’t
have um slic mozzarella that’s it’s
usually sliced mozzarella that we put on
here it’s all good not more mozzarella
can’t go wrong with more cheese the
better and
then some pepperoni pepperoni that’s the
best part I could just eat pepperon
that’s how good it is we cover that just
uh melt it a little bit a little bit
okay and we are running out of time here
but I do understand we have a pre-cooked
one I cannot wait to try it so yeah Ryan
you can walk on in here I am going to
try a bite before we go to break thank
