Homemade Tomato Soup
We love homemade Tomato Soup and Grilled Cheese as one of our weeknight meals. It’s ‘souper’ simple and hits the spot after a long day at work or school. Give this recipe a try, hopefully you enjoy it enough to use it as a go to meal!

• 28 oz. Can of Whole Tomatoes
• 1 Medium Onion Diced
• 2 TBSP Olive Oil
• 1 Cup of Diced Carrots
• 1/4 Cup of Half & Half
• 1 TBSP of Killer Hogs AP
• 1.5 TSP of Malcom’s Italian Seasoning
• 4 Cloves of Minced Garlic
• 4 Cups of Chicken or Vegetable Stock

Heat the olive oil in a large saucepan. Sauté the onions and carrots until translucent and soft. Add half of the seasoning and stir until incorporated. Add in the garlic and simmer for 5 more minutes. Add the tomatoes and stock and simmer for at least 30-45 minutes. Using an immersion blender, blend the ingredients until smooth. Add in the remainder of the seasoning and simmer for 5 more minutes. Finish with the half and half, stirring to combine thoroughly. Serve with a nice Grilled Cheese of your Choice!

hey everyone today at Big Daddy’s
Barbecue Pit we’re going to show you a
homemade tomato soup and our version of
a grilled cheese
sandwich so we got a pretty good size
stock pot here we’re going in with about
2 tablespoons of olive
oil to get that nice and hot we have one
medium sweet onion that we DIC real fine
that’s going
in one cup of carrots
get the rest of these onions out of here
we’re just going to let this sauté for
probably about 5 minutes then we’re
going to add in four cloves of fresh
garlic that we minced to the pot as
well so we got our onions and our
carrots sautéing a little bit we’re
going to add this is a tablespoon of
killer Hog’s AP and a teaspoon and a
half of Malcolm’s Italian Stallion good
stuff we’re gonna add about half of it
at this point so we’re just going to
season our veg we have in there and then
we’re also going to add the four cloves
of garlic in at this
point this tomato soup recipe is
amazing you try this recipe you won’t be
eating anything out of the can again
this is great real quick to make during
the week you don’t need a lot of time
you’ll see this this recipe will go
pretty quick
we’re going to give this a couple more
minutes we’re going to add the rest of
our ingredients okay so we got our
vegetables the onions are starting to
get
translucent we don’t really want to
Brown this at this point from here we’re
going to add in a 28 o can of peeled
whole Roma tomatoes you can use San
Marzano that’s typically what we have
today we’re just going with
these so they’re going into the pot and
to that we’re going to add in three cups
of vegetable stock now you can use
chicken stock you could use probably get
away with beef stock we typically either
use the vegetable stock or the chicken
in this so we’re just going to add in
about 2/3 of this about 3 cups and we’ll
reserve it if we need to thin it out a
little bit more we’ll keep that last
cup so what we’re going to do now is
bring this up to a simmer We’ll add the
rest of our seasonings once it starts
simmering and we’ll show you the Next
Step this already smells
wonderful but get these get these
Tomatoes warmed up start breaking down a
little bit and we’ll go from
there okay so we’ve got this up to a
nice simmer we’re going to go add and go
ahead and add the remaining
ingredients the remaining seasonings I
should say just get them in there we’re
going to give it a quick stir we’re
going to let this simmer probably for
about 15 to 25 minutes we want to start
we want to make sure that we’re getting
those carrots nice and
soft and we’re going to actually go in
and hit this with an immersion
blender and get it nice and smooth to
finish it
off smells wonderful
already Okay so we’re going to take a
look here
our those carrots and those tomatoes are
are getting nice and tender so at this
point what we’re going to do is I’m
going to I’m going to cut the heat off
of our burner here and I’m using an
immersion blender today and what I’m
going to do is just
basically puree everything in this pot
together and that’s what’s going to make
our tomato soup base now if you have if
you don’t have an immersion blender
that’s fine you can add a little at a
time to a a regular uh mixer or blender
you have at the house just be very
careful it’s super hot uh I found that
this is easiest way that I found to do
it uh but I’ve also used a regular
blender so we’re going to go ahead we’re
going to start out on low with this and
I’m just going to kind of pulsate and
and and break up the big pieces to

start so I’m hitting those big pieces of
[Applause]
tomato and just breaking them apart to
start so now I’m going to go ahead and
just do the whole pot on
high okay so you can see the consistency
we have
here it doesn’t look like your typical
tomato soup it’s not supposed to this is
homemade it’s got a lot of flavor packed
in there we’re just going to get give it
a quick little

try oh
yeah I’m going to add the rest of our
the last cup of stock we have in here
that vegetable stock to it just to thin
it out just a little bit we’re going to
bring this back up to a
simmer you see how good that
[Music]
looks and now at this point you got a
decision if you you want to add a little
bit of cream to it you
can if not you don’t have
to but we’re going to probably Heat this
up I’ll give it another
taste and we’re going to add probably
maybe 1/4 cup of uh half and half to it
just to get it a little creamy we’re
going to show you how we make a grilled
cheese
sandwich okay
so this has broke down real nice you can
see it’s nice and creamy we’re going to
add probably maybe 1/4 cup of this this
heavy or excuse me half and half to it
we don’t need a whole lot we’re just
going to put a little bit in here it’s
just going to make it give it a little
cream to it and that was
maybe it was probably more like an
eighth of a cup if it was even that much
but just going to give it a little bit
of of a more creamy taste and we’re
going to let this come back up to a
little bit of a simmer you can see it
smells wonderful and we’re going to
start our grilled cheese sandwich for
you we got our uh griddle going here
we’re going to make our grilled cheese
sandwich we’re going to we’re going to
really blow this thing out today we got
some smoked guda we got a little
mozzarella and we’re going to throw in a
little bit of PLO
cheese for the win on this one I think
this is going to be
excellent just butter in one
side of our this is sour dough
bread so we’re just going to give it a
good shmear of butter

like that we got this
running on medium
heat so we’re going to open up our pimo
cheese
here get this all
ready so we’re going to go ahead and lay
down butter side down one here to
toast I’m going to put on first the this
is a
mozzarella and then and this is the
smoke
[Music]
gouda now what I’m going to do is smear
on top
[Music]
of this side of the
bread some of this Pano cheese
[Music]
now we’re going to top that
guy going to get this thing good and
toasty we’ll flip it here in a couple
minutes okay we’re going to give this
thing a first
flip cheese is starting to melt
[Music]
nice go for a couple minutes on this
side okay so we got our grilled cheeses
done here see I think it’s looking good
cheese is melted nice and then to the we
got some fresh parsley that we chopped
that we’re going to put on top of this
bowl of tomato soup we have here and
we’re going to cut this grilled cheese
on an
angle see how gooey that
is that is looking good it is smoking
hot okay so we have our grilled cheese
done the tomato soup is done you can see
man that is looking good
we’re going to go ahead and we got to
give this grilled cheese a try it’s
going to be a little messy I’m thinking
you can see how good that
looks you know the traditional way to
eat these you got to dip
them get it in there get some of that
good homemade tomato soup on
it y’all that PLO cheese that sour dough
bread unbelievable smoked gouda this
tomato Sou soup is
fresh lots of flavors from that garlic
and the onion I got it going for another
