Giant Chocolate Cherry Cookie (170 cals for a 6-inch cookie)

    I adapted the recipe from a blog called Cheat Day Design. Made them a few years ago and they have been my go-to recipe ever since- fudgy, crispy, and ultra rich. Also gluten-free. This cookie is the size of my long piano hands!

    23g (4.5 tbs) cocoa powder

    55g (scant 1/4 cup) pumpkin puree

    16g (1 tbsp) any nut butter

    2-3 tbs monk fruit

    1/4 tsp baking soda

    Frozen cherries, chopped

    Chocolate chips/chunks and walnuts
