In a food processor I put cooked black beans, one pepper in adobo sauce; 4 cloves of garlic, 1 tsp cumin, chili powder, 1/2 tsp garlic powder, salt and pepper, I added 2 whole jalepenos and blended it together

I spread that on high protein mini tortillas with Violife Mozarella and pan fried until the cheese was melted

Then I added shredded lettuce, pickled red onions and Trader Joe’s Jalepeno Sauce!

I made 4 for myself and they were very delicious!!!

There was also lots of beans left to make more tomorrow.

Disclaimer: This is NOT all I ate today. I have well balanced plant based diet. This is my first week as a vegan so I wanted to share what I’ve been enjoying.
