Join me in preparing a simple yet delicious recipe for bulgur pilaf with black beans. The fiber-rich bulgur combined with protein-packed black beans, along with other vegetables and aromatic spices, creates a meal that will energize you and keep you feeling full for a longer period.
Served with pickled cucumbers and probiotic-rich yogurt, this dish is perfect for lunch or dinner.

Ingredients:
2 cups bulgur
2 1/2 cups cooked black beans
2 onions, chopped
2 tablespoons olive oil
4 cloves garlic, minced
2 tablespoons hot pepper paste
2 tablespoons tomato paste
1 carrot, diced
1 tablespoon dried mint
1 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon chili powder
1 teaspoon black pepper
1 teaspoon salt
4 cups water
1 bunch parsley, chopped
Pickled cucumbers and yogurt for serving

Instructions:

1. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté for a few minutes until softened.
2. Add minced garlic and continue sautéing for another minute.
3. Stir in hot paper paste and tomato paste, mixing well with the onions and garlic.
4. Add diced carrot, cooked black beans, and bulgur. Season with dried mint, oregano, thyme, chili powder, salt, and black pepper.
5. Pour in the water, ensuring it covers the bulgur by about 2 cm. Adjust the amount of water if necessary.
6. Bring to a boil, then reduce heat to low and simmer for 10-15 minutes.
7. Turn off the heat and let the pilaf rest for an additional 10 minutes.
8. Stir in chopped parsley and gently mix for a fluffy texture.
9. Serve warm with yogurt and pickled cucumbers. Enjoy!

We invite you to prepare a simple but delicious recipe together: Bulgur pilaf with black beans
Bulgur pilaf is a variant of the classic pilaf, in which rice is replaced by bulgur, a grain obtained from partially boiled, cracked and dried durum wheat.
In a saucepan, add 2 tablespoons of olive oil, after the oil has heated up, add 2 chopped onions.
Saute for a few minutes, until the onion softens.
Add 4 sliced ​​cloves of garlic and continue sauteing for 1 minute.
Add 2 tablespoons of hot pepper paste and 2 tablespoons of tomato paste, mix evenly with the onion and garlic.
Add 1 chopped carrot, 2 1/2 cups boiled black beans.
We need 2 cups of bulgur, which we will wash before cooking.
Season with 1 tablespoon of dry mint, 1 teaspoon of oregano, 1/2 teaspoon of thyme, 1/2 teaspoon of chili, 1 teaspoon of salt and 1 teaspoon of black pepper.
We add the water, ideally it should be 2 cm higher than the level of the bulgur, 4 cups of water would be enough, adjust if necessary.
We cover the pan with a lid and let it boil on low heat for 10-15 minutes.
Check if the bulgur is cooked and turn off the heat, let it sit for an extra 10 minutes.
Finely chop a bunch of green parsley.
Add fresh chopped parsley and mix gently to obtain a fluffy texture.
Fiber-rich bulgur combined with protein-rich black beans, along with vegetables and aromatic spices create a perfect meal for lunch or dinner.
