I made some Post Oak smoked Baby Back ribs. I rubbed both with 1:3 salt to pepper and tested a Texas Pete binder vs a yellow mustard binder. I did a 4ish hr smoke spraying with apple cider vinegar throughout the cook. I make Franklin BBQ sauce as well and sauced them before wrapping. From there did about 2 hrs in the aluminum wrap.

For the chicken I spatchcocked it and then smoked at 250 over Pecan wood until 140 internal temp. From there I turned it up to 400 to crisp the skin.

Both cooks were great to break in my new machine. I think I have a new hobby 😁
