How did it turn out? I’m on my ~20th iteration of this recipe and it’s still not quite there. At a glance my guesses would be
1) Not enough basil (or basil added too early)
2) Use wider/thicker noodles
3) Add tomatoes (preference here)
But of course with drunken noodles the sauce is key so I’m curious how that turned out for you.

NOODLES ▢ 7 oz /200g dried rice noodles , wide
STIR FRY ▢ 2 tbsp veg oil ▢ 4 large cloves of garlic , minced ▢ 1 Thai chili ▢ 1 yellow onion , sliced thin ▢ 1 chicken breast ▢ 2 tsp fish sauce ▢ 1 red bell pepper ▢ 1 yellow bell pepper ▢ bunch of Thai basil SAUCE ▢ 3 tbsp oyster sauce ▢ 1 1/2 tbsp light soy sauce ▢ 1 1/2 tbsp dark soy sauce ▢ 2 tsp sugar ▢ 1 tbsp water ▢ 1 pinch of msg
Marinade for chicken – Marinade for 15-25 min Small splash of soy sauce A little oil Baking soda to tenderize A little hoisin because I wanted to
Made the noodles first and set aside after cooking for about 5-7 min
Add oil, Cook the chicken till it’s about 90 percent of the way there. Remove, add in bell peppers and onions, deglaze and cook a bit. When a little translucent add garlic and chili for a min. Add back chicken, cook till cooked through. Once done, rinse noodles under cold water and throw into wok or pan. This helped me not have everything stick together. Add sauce and mix well and finish with Thai basil. I liked it a lot and I’ll also add recipe tins link for the original incase you want that too

That looks great! I used to go to a restaurant that would also add a large helping of chili paste that made it go to level 11 IMO. Greatest thing ever!
