    **INGREDIENTS**

    * 1 can canned coconut milk
    * 2 ripe avocados pitted and halved
    * 1 cup water
    * 1/2 cup [sweetener](https://amzn.to/3JKVOOq) or more to taste
    * 1 tsp [vanilla extract](https://amzn.to/37jUo0j)
    * 1/4 tsp peppermint extract
    * 1/8 tsp [xanthan gum](https://amzn.to/2Rdhs6E) optional
    * 1/4 tsp green food coloring optional
    * dark chocolate shavings

    **INSTRUCTIONS**

    1. Blend coconut milk, avocados, water, sweetener, vanilla and peppermint extracts, xanthan gum, and green food coloring (optional).
    2. Adjust sweetness and mintiness to taste.
    3. Freeze mixture for 2-3 hours, stirring every 15 minutes initially.
    4. Soften before serving.
    5. Serve in bowls or cones with dark chocolate shavings.
