This is my first edgibg on summer season (just kidding is 4 degree Celsius out but you know) being vegetarian and we go camping A LOT so im trying out of simple recipes that would involve cooking on the fire (or grill in this case) to see how feasible they are for a 4-5 day camping trip before we go and in just eating raw vegetables for days cuz everyone else are huge carnivores (as in side, what's a side?)

For this:
Whole wheat pita filled with chopped up lettuce, cucumbers, katamala olives and toum (garlic sauce). Topped with grilled grape tomatoes, charred red onion and grilled halloumi cheese (sliced thinner than it looks)

10/10 would bring camping. Ate it on my deck and was stoked about it.

In the future I think adding chickpeas to boost the nutrition would be good. I didn't add any but a vinegretterl could be nice too
