I can’t recommend this enough. It’s the perfect balance of ease of preparation vs depth of flavor. It’s so simple, yet so complex. I used ancho and guajiilo chili powder, as that’s what I had on hand, and it turned out absolutely fantastic.

Thank you for putting this on my radar. It looks spectacular, even on a day that was hot where I live. I assumed it would use cubed pork shoulder, and it’s nice that it uses country ribs, which are less work and easier for me to find.
