Tuscan-style white bean soup with kale:

Ingredients
– olive oil
– 1 yellow onion, diced
– 2 carrots, diced
– 2 celery, diced
– 3-4 cloves garlic, minced
– 1 teaspoon red pepper flakes
– 4 cups chicken stock
– 2 cans great northern beans
– couple sprigs of thyme
– parmesan rind
– 3 to 4 cups chopped kale

Steps
– Sautee onions, carrots, and celery until softened.
– Add garlic and dried red pepper flakes, cook until fragrant.
– Add broth, beans, thyme and parmesan rind.
– Bring to a boil then reduce to a simmer,
– Add kale, cover and cook until wilted (around 15-20 mins)
– Discard thyme and parmesan rind
– Use hand blender to blend about 1/4 of the soup for a thicker texture
– Season to taste
– Serve with black pepper, parmesan and a drizzle of olive oil
