I came across these two sushi restaurant videos last night. The Omakase one is USD $220 and the other at $140. I find it interesting to compare the two and had spent some time to think about it. Both are masters of sushi and the 2nd one comes from a traditional training I believe. If you compare the two making sushi, the more expensive restaurant chef takes about 10 moves on his hand to make a sushi (at about 40:00 he starts making sushi and I roughly counted) vs. less than 4 moves in hand for the 2nd one. Both appear in pretty good shape to me.
