Broth: Tomato water & kombu, shiitake, and dried tomato dashi. Added a splash of lemon and a raw shoyu tare and this made for a very light yet flavorful soup.
Seitan: Didn’t feel up to making it from scratch, so I just marinated store bought stuff and seared it in a pan. Turned out to be pretty well! I enjoyed the supple texture. Marinade was soy sauce, ginger, garlic, tomato paste, vegan worcestershire sauce, shio koji.
