ok so our roast is out of the oven and it has rested for 10 minutes so now I’m going to go ahead and slice it and assemble our sandwiches so first thing I want to do is make sure I cut the twine off that we tied the roast with so that it was all uniform shape so I’m going to take my kitchen shears and just find the twine give it a snip and just take it off and the other one snip it you there we go so I’m using my fingers to feel the doneness of the roast it’s got a little spring to it so I know that it’s still rare inside I like a rare roast beef sandwich if any of my friends don’t I can just throw it in the skillet for a couple seconds and saute it up a little bit i’m going to give my hands a quick rinse and in start placing so i want some thinly sliced pieces of roast beef so i’m just going to take my hand you can also use tongs if you don’t want to get your hands dirty I don’t care and we’re going to start the edge these will be the more done pieces just take your time my sous chef in the cat is really wanting some roast beef over here you might see a little pause beautiful so even though all my girlfriends are coming over I want a hearty roast beef sandwich so I’m going to slice a good amount for each person and for quality control i’m just going to taste it so the tender a lot of flavor from that garlic and herbs a good amount of salt but these are going to be good so i’m going to assemble a sandwich for you now so you can see how i do it but first i need to get the dressing I made a horseradish cream sauce and that needs to chill in the fridge so all the flavors meld together I’m going to grab that out of the fridge and tell you how I made it so I’ve got a horseradish cream sauce here goes really well with roast beef I’m going to stir it because I topped it with some white wine vinegar we have a cup of sour cream some Dijon mustard about a tablespoon of Dijon mustard a teaspoon of white wine vinegar and I actually added another teaspoon so they like mine really bold and then a quarter cup of freshly ground horseradish you find it at Whole Foods or any grocery store really just get the freshly grated kind the prepared kind sometimes has Dijon mustard in it so that would actually work fine because both of those things go into this cream sauce but we’ve got a beautiful horseradish cream sauce so I’m going to take my bread we’ve got a delicious Italian rustic loaf from Leon bakery which you can get locally in DC at the Union market they also sell the little red fox if you follow me on any social media you know I’m obsessed with that place so I’m going to take my bread we’ll just do it on here and I’m going to smear horseradish cream sauce on both sides I don’t like a dry sandwich I don’t know anybody that does so we’re gonna fill it with flavor then I’m going to pile on some beautiful roast beef gorgeous you okay i’m going to top it with some of our pea shoots i also have a little bit of the frisée under here whatever you have left over just make sure it’s like a nice peppery fresh green you can use any kind of lettuce that you want but i really like a fresh peppery green just going to jam that on there also gives it a nice texture gives it some crunch and add a couple pieces of the thursday as well all local then we’re going to top it with our other piece of bread more horseradish cream sauce and we have a beautiful roast beef sandwich for our girls lunch in I’m going to finish these up put them on a platter and set the table if you’re hungry for more make sure you subscribe to my youtube channel right here
