[Music] hello and welcome to my keto kitchen I’m Victoria today we’re going to make a lemon pound cake and two things brought this particular item to my attention one was this has actually been requested several times in the past few months and two I had my mother and my grandmother down this weekend and we went to an Amish market and they have all homade foods well my grandmother bought a lemon pound cake she cut me a piece and yes I did eat it and it was so good so my taste buds have been set to just a regular traditional lemon pound cake so my goal today is to make it taste exactly like the one I tasted this weekend and blew my keto but I’m back on track every now and then it just happens So today we’re going to make a lemon pound cake so let’s get started let’s start with the wet ingredients the first thing we need is two eggs we need one4 of a cup of sour cream and we need 1 cup of melted butter mostly melted now one teaspoon of vanilla one 1 teaspoon of lemon extract 2 tablespoon of lemon juice now you can squeeze your own lemon or just buy lemon juice and we need 2 tablespoons now before we add the dry ingredients let’s mix this up beautiful now we need 1/2 tblspoon of baking powder 1/4 teaspoon of salt one cup of your favorite keto sweetener I am using half of a cup of xylol half of a cup of Truvia which is arrol and lastly we need one in 1/2 cups of Victoria’s keto flour I link it right here and this is 123 G my rooster just has to make a show now it’s going to be thick let’s mix it up absolutely a beautiful batter right here that rooster okay I have a 9×4 bread dish I don’t know I use this for um I used to use it for Breads and I got the Pullman loaf I like to use this for any kind of loaf okay let’s put all of this in this pan loaf pan this is a beautifully smooth batter my goodness dare me oh just enough lemon yeah that’s really good 350° for 50 minutes and I’ll be right back okay so while that is baking we need to make a lemon glaze now I already made it because I wanted to make sure I got it just right I’ve been trying this for a few days and I had not perfected it but this is just right what you need is 1 tblspoon of heavy cream 1 and 1/2 tablespoon of lemon juice and one cup of powdered keto sweetener I use xylol because xylol does not burn like gulose does I don’t have to worry about it caramelizing and what you do is you put all of that in your pot cook it on medium until it’s completely clear it’s going to take about 15 minutes before all of the powdered sweetener dissolves completely you don’t want any grittiness then set it aside until your pound cake is baked and cooled so right now I actually have this back on my oven if you want to use iOS you’d probably be just fine but make sure when you make the cream that you’re just about ready to pour it on top of the pound cake because you cannot continue to heat alos or you will turn it into caramel so right here 1 tbsp of heavy cream 1 and 1/2 tbsp of lemon juice and one cup of your powdered keto sweetener and just cook it on medium heat until you’re ready to go okay so I took this out of the oven about 20 minutes ago this baked for 1 hour all right so I continued to let this bake because I didn’t think it was finished so this needs to be baked at 350° for one whole hour now I am going to try and get it out of here here oh that was easy all right look at that there we go that was easy that was super easy all right I have my glaze here but I want it to get a little bit harder so I’m going to let this set for a few more minutes it’s still too hot it’s not going to stick really well so I’m going to let this cool down and after this cools down I’m going to cut this give you guys a closeup then I’ll come back and taste it [Music] okay so I have completely baked this this is very soft going to scoop it up on the plate the cake is still warm so once it cools it won’t be as soft but I glazed I have a tendency to do everything way too fast and way too soon but I was really craving this since I had it this weekend so I kind of rushed it so don’t rush it be patient let it cool completely then put your glaze on but either way it should taste great let’s see oh yeah absolutely delicious I dare to say better than the last one cuz the one my grandmother bought it was I thought it was a little bit dry oh my word car come here okay tell me what you think about this remember Momos M tastes so moist it was good it’s better than the other one was great but was a little bit dry it’s kind of hard it was kind of hard to taste the lemon cuz all the dryness is how was this one wonderful those moist good that was really good I like how it was warm oh yeah it’s warm still this is the best keto lemon pound cake I have ever tried definitely wait till the cake cools completely before you put your glaze on this cake is so good you have to cook it for an entire hour okay and I never covered it I never put a cover on it cook it   1. Did I miss a video somewhere along the way where you did another flour measurement revision? Last thing I heard you say was 70g per cup, but did the math on this one and came up with 82g per cup.

  2. When I baked the cake this morning the batter didn’t have a good rise and the center fell when it cooled. For this kind of keto cake recipe, I usually whip the egg whites separately and then fold them in after everything else is mixed. I’ll try that next time.

  6. Hubby was diagnosed with Type 2 diabetes I'll never know HOW and it's caused him to go from 200lbs solid muscle to 112lbs of skin and bones. I've been making him home made egg nog, your keto bread and started making his favorite Hungarian Cherry Cake with your flour mix, plus many other things. He said the bread and cake is better than what his Hungarian Grandpa used to make and he was a professional baker 😊😊😊 Now I'm definitely going to have to try this one 🤗

Question_….at some point can you do a regular pound cake I don't remember you doing one also the new flour (Almond, Bamboo, egg-white powder Xanthan and psyllium) Measures differently I noticed with the pound cake (grams) I know your busy but I have trouble making older stuff I am hoping that some updates or conversions are in the making or should we just do the newer recipes with the new flour…?
