Actually I enjoy sake, or other clear grain-based liquor. The fruity flavor of wines tend to be quite strong and often over powers subtle taste of many sushi items, I feel. But that’s personal preference.
If I were to choose a wine, I’d say chardonnay or pinot grigio, for that fresh subtle white taste that goes well with many seafood dishes!

A dry sake, Sapporo, or a Suntory Toki on the rocks. No wine.

Definitely not Cab Franc, but to each their own 😂 Sancerre is usually good with raw fish

Gewürztraminer or Riesling are my choices for Asian foods. I’d find other whites too sour and a red with fish is not a great pairing.
I guess you could also consider a semi-sparkling Prosecco which can be a bit more savoury and pair nicely with fish.

You’re supposed to drink wine, not eat it.
